Falafel are traditionally made with chickpeas but, did you know, Macadamias are a great substitute for ingredients like chickpeas and lentils.
This recipe makes delicious macadamia falafel but can also be used to make vegan burger patties. Easy to prepare, packed with nutritious ingredients, this recipe is a winner for family meals with a twist.
INGREDIENTS:
1 cup macadamia nuts (Soak in cold water for 8 hours)
1/2 cup grated carrot
1/2 cup grated babymarrow
1 chopped onion
1/2 teaspoon salt
1/2 teaspoon tumeric spice
1/2 teaspoon coriander spice
1/2 teaspoon cumin spice
1/2 teaspoon black pepper
1/4 cup chopped fresh coriander
1/4 cup chopped fresh parsley
1/2 teaspoon baking powder
2 cups chickpea flour
oil for shallow frying
DIRECTIONS:
Soak the macadamias in cold water for approximately 8 hours. Its best to use un-roasted nuts for this.
Drain the nuts. Place them in a blender with the onion and pulse until finely chopped and sticky, but not too much as you don't want a paste.
Scoop the chopped macadamias into a medium sized bowl and add the carrots, baby marrow, herbs and spices and mix well.
Add 1 cup of chickpea flower and the baking powder to the mixture and mix well to ensure everything is well combined.
Keep adding the rest of the chickpea flour and mixing well and until the mixture forms a firmish ball when squeezed in your hand.
Cover the mixture and refrigerate for 30 - 60 minutes.
Remove from fridge. Using a spoon and your hands, divide into equal portions. Small balls, slightly flattened for falafel or portion into approximately 150g to make burger patties.
Heat a pan with shallow oil. Place the falafel in pan and cook on each side for approximately 90 sec per side. For the burgers, cook for around 2 - 3 minutes per side, until golden brown.
SERVING SUGGESTIONS:
falafel make a great finger food for platters and lunch time snacks.

DIPPING SAUCE SUGGESTIONS:
mix 1 cup Bulgarian yoghurt, 1/4 cup olive oil, 1 teaspoon tahini or a few drops of sesame seed oil, salt and pepper to taste. Dip and enjoy!
1 cup cream heated in microwave, stir in some blue cheese until melted through.
