If you have guests popping in for tea on short notice and realise you dont have anything sweet to serve, then these macaroons are the perfect thing to make. Super quick and easy and an absolute favourite in my house.
Plain is always good but add some white or dark chocolate and you will elevate them to a whole new level of deliciousness.
The below recipes makes around 24 macaroons.
INGREDIENTS:
1 tin sweetened condensed milk
2 cups macadamia flour **
☆ optional flavouring to change the profile, add some vanilla essence or even ½ teaspoon of cinnamon.
** 2 cups fine flour or 1 cup fine and 1 cup course macadamia flour for extra texture.
DIRECTIONS:
Line a sheet pan or roasting dish with wax paper and spray well with baking spray
Preheat oven to 180°C.
In a bowl mix the condensed milk and macadamia flour until well combined.
Using a spoon, scoop small amounts and roll into balls.
Place on the baking sheet. You can either bake as balls but does take longer in oven, or use a fork and gently flatten ever so slightly for a more biscuit appearance.
My favourite, add a white or dark chocolate 1" button on top and press gently.
Bake at 180°C for 20min or until golden brown.
Remove from oven and allow to cool for 5 min before serving.
Baked for 20min and removed will give a subtle crunch on the outside with a delicately soft texture on the inside. If you prefer them harder, bake for 20min ar 180° and then reduce the oven temperature to 80° and leave for a further hour. Switch off and allow to cool in oven.
Can also be enjoyed with a glass of fresh made Macadamia milk or even chocolate macadamia milk.
