This is a quick and easy recipe filled with lots of flavour and is super nutritious.
These take around 25min to make from start to finish. They can be cut up into small squares (24) and enjoyed as treats just as is, or slice into larger squares (12) and serve with grated cheese and syrup for a more filling breakfast option.
INGREDIENTS:
2 eggs
¼ cup softened butter
¼ cup granulated sugar
1 teaspoon baking powder
½ teaspoon psyllium husk powder (optional)*
2 x over ripe (black) bananas
1 cup macadamia flour
1½ cups oats
1 cup trail mix (mix of nuts and seeds)
Sprinkling of cranberries
1 cup flour
1 grated apple
End topping Ground cinnamon and extra sugar
DIRECTIONS:
Preheat over to 180°C.
Using a large mixing bowl whisk the eggs, sugar and butter until light and fluffy.
In order of listed ingredients, add each ingredient one at a time giving a quick 5 sec whisk each time.
When it comes to adding the macadamia flour change over to a firm spatula or wooden spoon and mix and fold ingredients through.
Mixture needs to be thick and moist, not "dry" and not runny. If necessary add a little extra flour as needed.
Using a flat baking tray, line with wax paper and spray with a cooking spray.
Spoon mixture onto wax paper and spread across until approximately 1½ to 2cm thick.
Sprinkle cinnamon and sugar across the top.
Bake for 20min until firm, and dark golden in colour.
Cut into desired portion sizes while still hot.
SERVING SUGGESTIONS:
Enjoy as is or make it extra yummy by adding grated cheese and syrup.
Psyllium husk is a binding agent and helps to bind the thick moist mixture when baking. Its not necessary but it does improve the texture and bind.
